Ingredients

  • 450 g ribeye steak
  • 300 g rigatoni
  • 1 onion
  • 3 cloves garlic
  • ½ cup chicken stock
  • ½ cup double cream
  • ½ cup grated parmesan cheese
  • Olive oil
  • Butter
  • Salt
  • Pepper
  • Paprika

Instructions

  1. Season the ribeye steaks with paprika, salt, pepper, and olive oil. Set aside.
  2. Heat a frying pan over high heat and sear the steaks for 1 minute per side. Add butter to baste the steak. Remove and let rest.
  3. Cook rigatoni in boiling salted water until al dente. Reserve pasta water.
  4. In the same pan, sauté onion until soft, then add garlic. Deglaze with white wine (if using) and simmer.
  5. Stir in chicken stock, double cream, and parmesan cheese until melted. Adjust consistency with reserved pasta water.
  6. Combine cooked rigatoni with sauce and chopped parsley; top with cubed steak to serve.
