  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1/2 cup feta cheese
  • Tzatziki sauce (Greek yogurt, grated cucumber, garlic, fresh dill)

Instructions

  1. Marinate the chicken by whisking together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes in a bowl. Let the chicken sit in this mixture for at least 30 minutes.
  2. Prepare the tzatziki by mixing Greek yogurt with grated cucumber, lemon juice, minced garlic, salt, and chopped dill. Refrigerate until ready to use.
  3. Cook rice or quinoa according to package instructions.
  4. Grill the marinated chicken in an air fryer at 380°F (193°C) for about 10 minutes or until it reaches an internal temperature of 165°F (74°C). Allow it to rest before slicing.
  5. Assemble your bowls by layering rice or quinoa with shredded romaine lettuce, diced cucumber, grape tomatoes, sliced red onion, and sliced chicken. Finish with feta cheese and drizzle with tzatziki sauce.
