  • ¼ cup feta cheese
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice of 1 lemon
  • ½ tbsp onion powder
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp freshly cracked pepper
  • Zest of 1 lemon
  • 1 tbsp extra virgin olive oil

Instructions

  1. In a mixing bowl, combine ground chicken, almond flour, parsley, dill, garlic, feta cheese, and seasonings. Form into meatballs (1½–2 inches).
  2. Heat olive oil in a skillet over medium heat. Sear the meatballs for about 3–4 minutes until browned on all sides. Cover and cook for an additional 5–6 minutes until cooked through.
  3. In the same skillet, bring chicken broth to a boil and add orzo. Cook according to package instructions until tender (8–10 minutes). Stir in lemon juice and olive oil.
  4. Serve lemon orzo on plates topped with meatballs, garnished with crumbled feta and parsley.
