Ingredients
- 4 ripe nectarines, pitted and quartered
- 4 ounces cherry tomatoes, halved
- 2 heirloom tomatoes, halved and cut into eighths
- 1/2 cup fresh cherries, pitted and halved
- 1/2 cup mixed baby spring greens
- 8 ounces burrata cheese, torn
- 8 slices prosciutto
- 2 tablespoons lemon juice
- 1 tablespoon white wine vinegar
- 1 tablespoon lemon zest
- assorted fresh herbs (oregano, mint, lemon thyme)
- 1/2 cup extra virgin olive oil
Instructions
- Preheat your grill or grill pan over medium-high heat.
- Brush the nectarines lightly with olive oil and grill for 2-3 minutes on each side until charred and tender. Remove from heat and let cool.
- In a small bowl, whisk together lemon juice, vinegar, lemon zest, minced herbs, olive oil, salt, and pepper to make the vinaigrette.
- In a large bowl, combine mixed greens, cherry tomatoes, heirloom tomato slices, cherries, and vinaigrette. Toss until well coated.
- Top the salad with torn burrata and prosciutto slices. Garnish with additional herbs and a sprinkle of black pepper before serving.
