Ingredients

  • 4 ripe nectarines, pitted and quartered
  • 4 ounces cherry tomatoes, halved
  • 2 heirloom tomatoes, halved and cut into eighths
  • 1/2 cup fresh cherries, pitted and halved
  • 1/2 cup mixed baby spring greens
  • 8 ounces burrata cheese, torn
  • 8 slices prosciutto
  • 2 tablespoons lemon juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon zest
  • assorted fresh herbs (oregano, mint, lemon thyme)
  • 1/2 cup extra virgin olive oil

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. Brush the nectarines lightly with olive oil and grill for 2-3 minutes on each side until charred and tender. Remove from heat and let cool.
  3. In a small bowl, whisk together lemon juice, vinegar, lemon zest, minced herbs, olive oil, salt, and pepper to make the vinaigrette.
  4. In a large bowl, combine mixed greens, cherry tomatoes, heirloom tomato slices, cherries, and vinaigrette. Toss until well coated.
  5. Top the salad with torn burrata and prosciutto slices. Garnish with additional herbs and a sprinkle of black pepper before serving.
