  • 2 tbsp coconut oil (or unsalted butter)
  • ½ cup pure maple syrup
  • 1 large egg
  • ¾ cup freshly grated carrots
  • 1 ½ tsp baking powder
  • 1 ½ tsp ground cinnamon
  • ⅛ tsp salt

Instructions

  1. In a medium bowl, whisk together oats, flour, baking powder, cinnamon, and salt.
  2. In another bowl, mix melted coconut oil (or butter), egg, vanilla extract, and maple syrup until well combined.
  3. Gradually add dry ingredients to wet ingredients and stir until just incorporated. Fold in grated carrots.
  4. Chill dough in the refrigerator for 30 minutes.
  5. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  6. Drop rounded scoops of dough onto the baking sheet and slightly flatten each scoop.
  7. Bake for 12-15 minutes until edges are golden. Cool on the baking sheet for 15 minutes before transferring to a wire rack.
