Ingredients
- 12 large eggs
- 32 ounces small curd cottage cheese (4% milkfat recommended)
- 16 ounces shredded Colby Jack cheese
- 1 pound cooked and chopped bacon
- ¾ cup all-purpose flour (or gluten-free substitute)
- 10 ounces frozen chopped spinach (thawed and drained)
- 1 cup diced red bell pepper
- ½ cup minced yellow onion
Instructions
- Preheat the oven to 350°F and lightly coat a 9×13-inch baking pan with nonstick cooking spray.
- In a large bowl, whisk together the eggs until fully combined.
- Mix in the cottage cheese, melted butter, cooked bacon (reserve some for topping), spinach, half the Colby Jack cheese, half the red bell pepper, and all the onion.
- Stir in the flour, seasoned salt, black pepper, and half the Parmesan cheese until well mixed.
- Pour the mixture into the prepared baking pan. Top with reserved bacon, remaining red bell pepper, Colby Jack cheese, and Parmesan cheese.
- Cover with foil and bake for 40 minutes. Uncover and bake an additional 20–30 minutes until set in the center.
- Let rest for 15–20 minutes before slicing.
