- 1 pound bone-in chicken thighs
- 3 celery stalks, diced

- 1/2 yellow onion, diced
- 8 cups chicken stock
- 12 ounces frozen egg noodles
- 1/2 tablespoon dried thyme
- 1/2 tablespoon dried basil
- 2 cloves garlic, minced
- 2 bay leaves
- 1/2 to 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large stock pot over medium heat, melt butter. Season chicken with salt and pepper; add to pot and cook until browned on both sides (3-4 minutes per side).
- Remove chicken and discard skin. Sauté celery, carrots, onion, and garlic in the residual fat for 3-4 minutes until fragrant.
- Add chicken stock and bring to a boil; return chicken to pot and simmer for 25-30 minutes.
- Remove cooked chicken to shred it into bite-sized pieces.
- Bring broth back to boil; add frozen egg noodles and cook according to package instructions (about 20 minutes).
