  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a skillet over medium heat, sear the chicken for 3–4 minutes per side until golden brown. Set aside.
  3. In a mixing bowl, combine BBQ sauce and honey; mix well.
  4. Toast uncooked rice in the same skillet for 1–2 minutes until slightly golden.
  5. Add chicken broth and half of the sauce to the rice; stir to combine.
  6. Return the seared chicken to the pan and pour remaining sauce over it.
  7. Cover and simmer on low heat for about 15 minutes until rice is tender and chicken is cooked through.
  8. If desired, add mixed vegetables and cook for an additional 5 minutes.
