Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
- In a skillet over medium heat, sear the chicken for 3–4 minutes per side until golden brown. Set aside.
- In a mixing bowl, combine BBQ sauce and honey; mix well.
- Toast uncooked rice in the same skillet for 1–2 minutes until slightly golden.
- Add chicken broth and half of the sauce to the rice; stir to combine.
- Return the seared chicken to the pan and pour remaining sauce over it.
- Cover and simmer on low heat for about 15 minutes until rice is tender and chicken is cooked through.
- If desired, add mixed vegetables and cook for an additional 5 minutes.
