Instructions

  1. Heat a large skillet over medium heat and season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear the chicken for 3-4 minutes per side until golden brown. Remove from the pan.
  2. In the same skillet, toast the uncooked rice for 1-2 minutes.
  3. Add chicken broth, BBQ sauce, and honey; stir well.
  4. Return seared chicken to the pan, nestling it into the rice mixture.
  5. Bring to a gentle boil, then reduce heat to low and cover. Simmer for 15 minutes.
  6. Sprinkle mixed vegetables on top; cover again and cook for an additional 5 minutes until rice is tender and chicken is cooked through.
  7. Let sit for 5 minutes before fluffing the rice; garnish with green onions or parsley before serving.
