Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8-inch baking dish or cast-iron skillet.
  2. Cook and mash the sweet potato until smooth; set aside to cool.
  3. In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  4. In another bowl, mix mashed sweet potatoes, buttermilk, melted butter, eggs, and honey until combined.
  5. Pour wet ingredients into dry ingredients and stir gently until just mixed.
