Ingredients
- 16 large mushrooms
- 1/2 lb Italian sausage
- 2 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tbsp chopped parsley
- 3 tbsp cream cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F and grease a baking dish with olive oil.
- Remove stems from mushrooms and finely chop them. Set caps aside.
- In a skillet over medium heat, brown the Italian sausage. Add olive oil, chopped mushroom stems, onion, and garlic; sauté until soft.
- In a bowl, combine the cooked mixture with breadcrumbs, Parmesan cheese, parsley, cream cheese, salt, and pepper.
- Stuff each mushroom cap generously with the filling and sprinkle with extra Parmesan if desired.
- Drizzle with olive oil and bake for 25–30 minutes or until golden brown.
- Let cool briefly before serving warm.
