  • 35 pound boneless beef chuck roast
  • 1 tablespoon oil
  • 4 cups beef broth
  • 1 pound baby red potatoes
  • 4 large carrots, chopped
  • 1 large yellow onion, diced
  • Salt
  • Onion powder
  • Garlic powder
  • Black pepper
  • Smoked paprika (optional)

Instructions

  1. Season the roast with salt, onion powder, garlic powder, black pepper, and smoked paprika.
  2. Sear the seasoned roast in the Instant Pot using the Sauté function until browned on all sides.
  3. Deglaze the pot with beef broth and Worcestershire sauce.
  4. Add the roast back into the pot along with potatoes, carrots, and onions.
  5. Pressure cook on High for 60 minutes (3 lb) or 80-90 minutes (4-5 lb).
  6. Allow for natural pressure release for about 10 minutes before quick releasing any remaining steam.
  7. Shred the roast and make gravy by thickening the remaining liquid with cornstarch mixed in water.
