  • 2 lb Hot Italian Sausage (or sweet/mild)
  • 24 oz shredded mozzarella cheese
  • 1 medium onion, diced
  • 5 cloves garlic, minced
  • 28 oz can diced tomatoes
  • 1½ tsp dried basil
  • 1½ tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F and spray a 3-quart casserole dish with non-stick spray.
  2. In a large skillet, cook sausage over medium heat until browned. Remove from pan and set aside.
  3. Sauté onions and garlic in the reserved grease until translucent.
  4. Add diced tomatoes, basil, oregano, salt, and pepper; cook for 5 minutes.
  5. Stir in the sausage and simmer covered for 20–30 minutes.
  6. Cook the penne according to package directions until al dente; drain and rinse.
  7. Combine the sausage mixture with the pasta, adding half of the mozzarella until melted.
  8. Layer half of the pasta mixture in the casserole dish, top with some mozzarella, then add the remaining pasta mixture followed by more mozzarella.
  9. Cover with foil and bake for approximately 30 minutes until bubbly.
