- 16 oz Penne pasta
- 2 lb Hot Italian Sausage (or sweet/mild)
- 24 oz shredded mozzarella cheese
- 1 medium onion, diced
- 5 cloves garlic, minced
- 28 oz can diced tomatoes
- 1½ tsp dried basil
- 1½ tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F and spray a 3-quart casserole dish with non-stick spray.
- In a large skillet, cook sausage over medium heat until browned. Remove from pan and set aside.
- Sauté onions and garlic in the reserved grease until translucent.
- Add diced tomatoes, basil, oregano, salt, and pepper; cook for 5 minutes.
- Stir in the sausage and simmer covered for 20–30 minutes.
- Cook the penne according to package directions until al dente; drain and rinse.
- Combine the sausage mixture with the pasta, adding half of the mozzarella until melted.
- Layer half of the pasta mixture in the casserole dish, top with some mozzarella, then add the remaining pasta mixture followed by more mozzarella.
- Cover with foil and bake for approximately 30 minutes until bubbly.
