Ingredients
- 2 lb thin-sliced beef (or chicken, tofu, or shrimp)
- 1 lb Korean sweet potato noodles (glass noodles / dangmyeon)
- 3 medium carrots, julienned
- 1 large white onion, thinly sliced
- 1/2 bunch green onions, chopped
- 6 garlic cloves, minced
- 1/2 lb spinach leaves
- 4 tablespoons sesame oil (divided)
- 1 tablespoon olive oil
- 6 tablespoons soy sauce (or tamari)
- 3 tablespoons brown sugar
Instructions
- Cook the sweet potato noodles in boiling water with a drizzle of olive oil for 5–6 minutes until chewy but tender. Drain and set aside.
- In a skillet over high heat, cook the beef until browned. Season with half of the soy sauce, sesame oil, and brown sugar; set aside.
- Sauté the carrots and onion in another skillet over medium heat until softened. Add remaining soy sauce, sesame oil, and brown sugar.
- Stir in garlic and green onions; cook for one minute before adding spinach until wilted.
- Combine cooked noodles with beef and sautéed vegetables in a large mixing bowl; toss to coat everything evenly.
- Serve warm; garnish with extra green onions if desired.
