  • 1 cup dried red kidney beans (soaked overnight)
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 3 cloves garlic (chopped)
  • 5 cups vegetable stock
  • 2 tablespoons Cajun seasoning
  • 1 cup long white grain rice

Instructions

  1. Heat oil in a large pot over medium heat. Add sliced vegan sausage and cook until browned.
  2. Stir in diced onion, celery, and green bell pepper; cook until onions are translucent.
  3. Add garlic, Cajun seasoning, vegetable stock, bay leaves, and thyme; bring to a boil.
  4. Drain soaked kidney beans and stir them into the pot along with black pepper and vinegar if using.
  5. Cover and simmer for 1 to 1.5 hours until beans are tender; add water as needed.
  6. Cook rice according to package instructions separately.
  7. Mash some beans against the pot side to thicken the stew before serving.
