  • 4 boneless (skinless) chicken breasts, diced
  • 10 oz pasta (penne, rigatoni, or fettuccine)
  • 1 cup sun-dried tomatoes, diced
  • 1¼ cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • Olive oil from sun-dried tomatoes
  • 2 tbsp cornstarch
  • 1 tsp red pepper flakes (optional)
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta in salted water until al dente; reserve ½ cup pasta water before draining.
  2. In a mixing bowl, coat chicken with cornstarch, oregano, salt, pepper, and optional red pepper flakes.
  3. In a large skillet over medium-high heat, cook chicken in olive oil until golden (5-6 minutes); set aside.
  4. Sauté garlic and sun-dried tomatoes in the same skillet for 2-3 minutes.
  5. Stir in chicken broth and heavy cream; simmer for 3-5 minutes.
  6. Add Parmesan cheese until melted; return chicken to skillet and simmer for another 5 minutes.
  7. Toss cooked pasta with the sauce; adjust consistency with reserved pasta water if needed.
  8. Garnish with fresh basil and serve warm.
