  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 large eggs
  • 3/4 cup Panko breadcrumbs
  • 1/3 cup milk
  • 3/4 cup ketchup (for glaze)
  • 2 Tbsp brown sugar

Instructions

  1. Preheat your oven to 350°F and line a rimmed baking sheet with parchment paper.
  2. In a skillet, sauté the chopped onion in olive oil until softened. Let cool.
  3. In a large bowl, combine ground beef, cooled onions, garlic, eggs, breadcrumbs, milk, salt, pepper, and Italian seasoning. Mix gently until just combined.
  4. Shape mixture into a loaf on the prepared baking sheet. Bake uncovered for 40 minutes.
  5. Prepare the glaze by mixing ketchup, vinegar, brown sugar, garlic powder, and onion powder in a small bowl.
  6. Spread the glaze over the meatloaf and bake for an additional 20 minutes until an internal temperature of 160°F is reached. Allow to rest before slicing.
