  • 1/2 cup whole milk
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons active dry yeast
  • 1 large egg
  • 2 tablespoons unsalted butter
  • 3 1/2 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • Peanut or vegetable oil (for frying)
  • 1 cup powdered sugar (for dusting)

Instructions

  1. Warm water and milk in a microwave-safe bowl until just warm (not exceeding 100°F).
  2. Mix in sugar and sprinkle yeast over the top; let it sit for 15 minutes until foamy.
  3. Stir in beaten egg, salt, butter, and half of the flour until a thick batter forms; then incorporate remaining flour.
  4. Turn dough onto floured surface and fold gently; place in an oiled bowl covered with a towel.
  5. Let dough rise in a warm area until doubled in size (about 1.5 to 2 hours).
  6. Heat oil in a Dutch oven to about 370°F.
  7. Roll out the dough and cut into squares.
  8. Fry beignets in batches until golden brown on both sides.
  9. Drain on paper towels and dust generously with powdered sugar before serving.
