  • Raspberry jam (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two 8-inch cake pans with parchment paper.
  2. In a large mixing bowl, combine the sugar, melted vegan butter, dairy-free yogurt, vanilla extract, and almond extract; whisk until smooth.
  3. Gradually add the ground almonds, flour, baking powder, baking soda, and sea salt. Mix until combined, then pour in the vegan buttermilk, whisking gently.
  4. Divide the batter evenly between the prepared pans and bake for about 40–42 minutes or until a toothpick inserted comes out clean.
  5. Allow cakes to cool in pans for about 10 minutes before transferring to a cooling rack to cool completely.
