  • 2 Tbsp honey
  • 2 Tbsp avocado or olive oil
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 Tbsp Dijon mustard
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 2 lb boneless, skinless chicken breasts
  • Kosher salt
  • Fresh black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, garlic, Italian seasoning, Dijon mustard, salt, and pepper.
  3. Toss tomatoes and mozzarella with salt and pepper in another bowl.
  4. Heat oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper; sear until golden brown (1-2 minutes per side).
  5. Pour sauce over chicken and sprinkle the tomato-mozzarella mixture on top.
  6. Bake uncovered for 18-23 minutes until chicken reaches an internal temperature of 165°F. Rest for 5 minutes before serving.
