Ingredients

  • 5 bone-in chicken thigh fillets, skin removed
  • 1 onion, chopped
  • 2 large garlic cloves, minced
  • 2 tablespoons butter (or olive oil)
  • 1 ½ cups uncooked white rice
  • 1 ½ cups hot chicken broth/stock
  • 1 ¼ cups hot water

Instructions

  1. Preheat oven to 350°F (180°C).
  2. In a baking dish, scatter chopped onion and minced garlic; place butter in the center. Bake for 12-15 minutes until softened.
  3. While baking, mix paprika, thyme, garlic powder, onion powder, salt, and pepper in a bowl; rub over both sides of the chicken thighs.
  4. Stir uncooked rice into the baked onion-garlic mixture; place seasoned chicken on top.
  5. Pour hot broth and water around the edges of the chicken.
  6. Cover tightly with foil and bake for 30 minutes.
  7. Remove foil, optionally spray chicken with oil for color, and bake uncovered for another 20 minutes until golden brown and liquid is absorbed.
  8. Let sit for 5 minutes before fluffing rice with a fork.
