- 3 large chicken breasts
- 1 tbsp olive oil
- 1/4 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 teaspoon cumin
- 1/4 tsp salt
- 8 oz (1 block) cream cheese
- 3 tbsp sour cream
- 1/3 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp coriander
- 1/2 tsp salt
- 3 green onions (minced)
- 2 tbsp cilantro (minced)
- 1 lime (juiced)
- 1 cup shredded cheddar cheese
- 1/2 cup shredded pepper jack cheese
- 16–18 small flour tortillas
- 1/2 cup sour cream (for dipping)
- 1 tbsp cilantro (minced, for dipping)
- 1/2 lime (juiced, for dipping)
- 1/4 tsp garlic powder (for dipping)
Instructions
- Preheat oven to 375°F (190°C). Season chicken breasts with olive oil and spices, then bake for 20-25 minutes until cooked through. Shred the chicken.
- Increase oven temperature to 425°F (218°C). In a microwave-safe bowl, soften cream cheese; mix in sour cream, salsa, spices, green onions, cilantro, lime juice, cheeses, and shredded chicken until well combined.
- Fill each tortilla with a few tablespoons of the mixture; roll tightly and place seam-side down on a lined baking sheet. Brush with melted butter if desired.
