  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ¼ tsp nutmeg

  • ⅛ tsp ground black pepper
  • 150 g unsalted butter
  • 160 g cream cheese
  • 220 g icing sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine white and brown sugars with vegetable oil. Mix in eggs one at a time, then add pumpkin puree and vanilla.
  3. In another bowl, whisk together flour, baking powder, baking soda, and spices. Gradually mix dry ingredients into the wet mixture until just combined.
  4. Divide batter evenly between prepared pans and bake for about 60 minutes or until a toothpick comes out clean.
  5. Cool cakes in pans for 15 minutes before transferring to wire racks.
