  • 4 cups shredded beef birria
  • 2 cups birria broth (consomé)
  • 16 thick corn tortillas
  • 1 pound Oaxaca cheese or Monterey Jack cheese, shredded
  • Garnishes: diced red onions, chopped cilantro, lime wedges

Instructions

  1. Prepare the beef birria according to your preferred recipe and keep it warm along with the broth.
  2. Preheat a large skillet or cast iron griddle over medium-high heat, lightly greasing it.
  3. Dip each tortilla into the warm consomé on both sides and place on the skillet. Cook for about 30 seconds until slightly crisp.
  4. On one half of each tortilla, add 2 tablespoons of cheese and about ¼ cup of shredded birria beef. Fold the tortilla over to form a taco.
  5. Cook for an additional 30–60 seconds until the cheese melts and the tortilla is golden brown. Repeat with remaining tortillas.
  6. Serve hot with garnishes and bowls of warm consomé for dipping.
