Ingredients
- 4 cups shredded beef birria
- 2 cups birria broth (consomé)
- 16 thick corn tortillas
- 1 pound Oaxaca cheese or Monterey Jack cheese, shredded

Instructions
- Prepare the beef birria according to your preferred recipe and keep it warm along with the broth.
- Preheat a large skillet or cast iron griddle over medium-high heat, lightly greasing it.
- Dip each tortilla into the warm consomé on both sides and place on the skillet. Cook for about 30 seconds until slightly crisp.
- On one half of each tortilla, add 2 tablespoons of cheese and about ¼ cup of shredded birria beef. Fold the tortilla over to form a taco.
- Cook for an additional 30–60 seconds until the cheese melts and the tortilla is golden brown. Repeat with remaining tortillas.
