  • 1/2 cup dry white wine

Instructions

  1. Sauté the sliced mushrooms in olive oil and butter until golden and liquid evaporates, about 6–8 minutes. Set aside.
  2. In the same skillet, cook chopped onion until translucent (about 3 minutes), then add minced garlic for another minute.
  3. Stir in Arborio rice, cooking until edges become translucent (about 2 minutes).
  4. Pour in white wine and stir until nearly absorbed.
  5. Gradually add warm vegetable broth one ladle at a time, stirring frequently until absorbed before adding more; continue until rice is creamy and al dente (18–20 minutes).
  6. Fold in sautéed mushrooms, butter, and Parmesan cheese; season with salt and pepper. Cook for an additional 2 minutes.
  7. Serve immediately, garnished with extra Parmesan cheese and parsley if desired.
