  • 2 heads of cauliflower
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ cup olive oil
  • 1 teaspoon chopped parsley

Instructions

  1. Preheat oven to 500ºF (260ºC) with the rack in the lower third position.
  2. Remove leaves from the cauliflower and cut each head in half lengthwise. Slice into 1½-inch thick steaks.
  3. In a small bowl, mix salt, black pepper, garlic powder, and paprika.
  4. Drizzle olive oil over both sides of each steak, then sprinkle with the seasoning mixture.
  5. Place on a rimmed baking sheet and cover tightly with aluminum foil. Roast for 5 minutes.
  6. Remove the foil and roast for an additional 10 minutes. Flip each steak and roast for another 6 to 8 minutes until golden brown.
