Ingredients
- 1 whole chicken (4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Zest and juice of 2 large oranges
- 1 tablespoon honey
- 1 tablespoon soy sauce
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).

- Place the chicken in a roasting pan and coat it thoroughly with the marinade. Let it rest for at least 15 minutes.

- Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting occasionally.
- Allow the chicken to rest for 10-15 minutes before carving.
