Ingredients

Scale
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1/2 cup thick caramel sauce (homemade or store-bought)
  • Flaky sea salt, for topping

Instructions

  1. In a small bowl, mix cream cheese, granulated sugar, and vanilla until smooth. Transfer to a piping bag and chill for 15 minutes.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. In another bowl, beat butter with both sugars until fluffy. Add egg and vanilla; combine.
  3. Gradually mix dry ingredients into the wet mixture until just combined.
  4. Scoop dough (about 2 tablespoons), flatten slightly, add cheesecake filling in the center, then seal the dough around it. Shape into balls and chill for 20–30 minutes.
  5. Preheat oven to 350°F (175°C). Bake for 10–12 minutes until edges are golden. Cool on the sheet for 5 minutes before transferring to a wire rack.
  6. Once cool, pipe additional cheesecake filling on top, drizzle with caramel sauce, and sprinkle with flaky sea salt.
