- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 4 oz cream cheese, softened
- 1/4 cup granulated sugar (for filling)
- 1/2 cup thick caramel sauce (homemade or store-bought)
- Flaky sea salt, for topping
Instructions
- In a small bowl, mix cream cheese, granulated sugar, and vanilla until smooth. Transfer to a piping bag and chill for 15 minutes.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt. In another bowl, beat butter with both sugars until fluffy. Add egg and vanilla; combine.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Scoop dough (about 2 tablespoons), flatten slightly, add cheesecake filling in the center, then seal the dough around it. Shape into balls and chill for 20–30 minutes.
- Preheat oven to 350°F (175°C). Bake for 10–12 minutes until edges are golden. Cool on the sheet for 5 minutes before transferring to a wire rack.
- Once cool, pipe additional cheesecake filling on top, drizzle with caramel sauce, and sprinkle with flaky sea salt.
