  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon garlic powder

  • 1 can (15 oz) black beans
  • 1/3 cup jarred salsa
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 2 cups hot cooked rice
  • 1 tablespoon melted butter
  • 1 tablespoon fresh lime juice
  • 3 tablespoons cilantro, chopped
  • salt, to taste
  • burrito-sized tortillas (whole wheat optional)
  • Monterey Jack, Cheddar, or Pepper Jack cheese, shredded
  • pico de gallo or salsa
  • guacamole
  • sour cream

Instructions

  1. Prepare the chicken filling by heating shredded rotisserie chicken with salsa and seasonings in a skillet for 3–4 minutes.
  2. In a saucepan, simmer black beans with salsa and spices for about 10 minutes.
  3. Mix hot cooked rice with melted butter, lime juice, cilantro, and salt in a bowl to create the cilantro lime rice.
  4. Assemble each burrito by layering cheese, chicken filling, rice, black beans, and desired toppings on a tortilla.
  5. Roll up tightly and grill in a skillet until golden brown on both sides.
  6. Serve with extra salsa or guacamole.
