  • 12 full-size graham crackers
  • 6 tablespoons unsalted butter (melted)
  • 1 cup sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • 2 heaping cups mini marshmallows

Instructions

  1. Preheat oven to 350°F. Prepare an 8×8 inch baking pan with nonstick spray and parchment paper.
  2. In a food processor, blend graham crackers and sugar into fine crumbs. Mix in melted butter and press into the bottom of the prepared pan.
  3. Bake crust for 15-20 minutes until golden brown; set aside.
  4. In a bowl, whisk together oil, sugar, eggs, and vanilla. Stir in cocoa powder, flour, salt, and baking powder until combined. Fold in chocolate chips.
  5. Pour brownie batter over the cooled crust and bake for 30-40 minutes until set.
