  • 2 cups + 1 Tablespoon all-purpose flour
  • 200 grams (about ¾ cup) sourdough discard (unfed, at room temperature)
  • 1 egg (lightly beaten)
  • 1 Tablespoon fresh parsley or rosemary (chopped)
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 9 Tablespoons unsalted butter (melted and softened)
  • Flaky sea salt (for topping)

Instructions

  1. In a stand mixer bowl, combine warmed milk, yeast, and sugar. Add flour, sourdough discard, beaten egg, herbs, salt, and garlic powder. Slowly mix in melted butter until a shaggy dough forms.
  2. Knead dough on a floured surface until smooth and slightly tacky, about 3–4 minutes.
  3. Place dough in a greased bowl, cover with plastic wrap, and let rise for 60–90 minutes until doubled.
  4. Prepare the topping by mixing softened butter with herbs, garlic powder, and salt; set aside one tablespoon.
  5. Divide risen dough into twelve pieces; flatten each piece into circles. Spread butter mixture on each before folding into tacos; place fold-side down in a greased loaf pan.
  6. Cover loaf pan and let rise for another 30–45 minutes until puffy.
  7. Preheat oven to 350℉.
  8. Bake for about 30 minutes; cover loosely with foil and bake an additional 5–10 minutes until golden brown. Brush with remaining butter mixture while warm and sprinkle with flaky sea salt.
