  • 160 grams sourdough starter
  • 8 grams salt

Instructions

  1. In a large bowl, combine water, sourdough starter, and salt. Stir well to mix. Add flour and mix until combined.
  2. Knead briefly by hand until all flour is incorporated. Cover with plastic wrap and let rest for 30 minutes.
  3. Perform a series of stretch and folds every 20 minutes for an hour to develop gluten structure.
  4. Allow the dough to bulk ferment at room temperature for 3-4 hours until nearly doubled in size.
  5. Shape the dough into a tight ball and place it seam-side up in a floured basket. Let it proof for another 2 hours.
  6. Preheat your oven to 460°F (238°C) with a dutch oven inside.
  7. Score the top of the dough and carefully transfer it to the preheated dutch oven. Bake covered for 30 minutes, then uncover and bake for an additional 10 minutes until golden brown.
  8. Cool on a rack before slicing.
