  • 2022 ounces super firm or firm tofu
  • 2 tablespoons canola oil
  • 1 cup full-fat canned coconut milk
  • 34 tablespoons sambal oelek (adjust for spice)
  • 4 teaspoons red curry paste
  • 2 tablespoons minced ginger
  • 1 cup thinly sliced shallots
  • Garnish: scallions, red pepper flakes, toasted sesame seeds

Instructions

  1. Prepare the tofu by pressing it to remove excess moisture if using extra-firm tofu. Cut into 1-inch cubes.
  2. In a large non-stick pan, heat oil over medium-high heat. Fry tofu until golden and crispy on all sides, about 3 minutes per side.
  3. In another skillet, heat coconut oil over medium heat. Add shallots and ginger; cook until softened.
  4. Stir in coconut milk, sambal oelek, red curry paste, salt, and sugar; simmer for 3-4 minutes.
  5. Add fried tofu to the sauce; stir to coat evenly. Serve hot with garnishes of choice.
