  • 12–15 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach (chopped) or 1 cup frozen spinach (thawed and drained)
  • 2 cups marinara sauce
  • Olive oil
  • Italian seasoning

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook pasta shells according to package instructions until al dente; drain and set aside.
  3. In a mixing bowl, combine ricotta cheese, half of the mozzarella, Parmesan, egg, chopped spinach, minced garlic, salt, pepper, and Italian seasoning.
  4. Spread half of the marinara sauce in a baking dish. Stuff each shell with about two tablespoons of filling and place in the dish.
  5. Top with remaining marinara sauce and sprinkle with remaining mozzarella.
  6. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes until bubbly.
