  • ½ cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 eggs
  • 3 ⅔ cups gluten-free flour (or all-purpose flour)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ⅓ cup finely diced strawberries
  • Pinch of sea salt (optional)

Instructions

  1. In a stand mixer, beat softened cream cheese and powdered sugar until creamy.
  2. Scoop and freeze teaspoon-sized balls of the cream cheese mixture.
  3. Mix cold butter, granulated sugar, and brown sugar in a clean stand mixer until fluffy.
  4. Add eggs and mix until combined.
  5. Gradually incorporate flour, baking soda, vanilla extract, and sea salt until dough forms.
  6. Fold in diced strawberries and chill dough for 30 minutes.
  7. Preheat oven to 350°F and prepare baking pans with parchment paper.
  8. Shape dough into balls, create an indent, fill with frozen cream cheese balls, and seal.
  9. Space on baking sheets and bake for 11-12 minutes until just set in the middle.
