  • 16 oz medium-sized baby bella or portobello mushrooms
  • 2 tbsp olive oil (for tossing)
  • 1 tbsp olive oil (for sautéing)
  • 1 shallot
  • 3 garlic cloves
  • 1 tbsp minced fresh cilantro (or 1/2 tbsp dried)
  • 4 oz cream cheese
  • 1 egg
  • 1/4 cup bread crumbs
  • 1/2 cup fresh grated Parmesan cheese
  • Salt
  • Black pepper

Instructions

  1. Preheat the oven to 350°F and lightly grease a baking dish.
  2. Clean the mushrooms by rinsing briefly or wiping with a damp towel; remove and chop the stems.
  3. In a small pan, heat olive oil and sauté shallot and chopped mushroom stems until tender; add minced garlic and sauté until fragrant.
  4. In a mixing bowl, combine sautéed vegetables with cream cheese, bread crumbs, Parmesan cheese, cilantro, egg, salt, and pepper until well mixed.
  5. Toss mushroom caps in olive oil, then fill each cap with the stuffing mixture.
  6. Bake for 20–25 minutes until golden brown on top.
