  • 2 pounds chicken breast
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Add pineapple chunks on top.
  3. In a bowl, whisk together soy sauce, brown sugar, apple cider vinegar, minced garlic, grated ginger, and red pepper flakes until smooth.
  4. Pour the sauce over the chicken and pineapple in the crockpot. Cover and cook on low for 4 to 6 hours until the chicken is tender.
  5. Shred the chicken using two forks and return it to the sauce.
  6. To thicken, mix cornstarch with water until smooth; pour into the crockpot and stir well. Cook on high for an additional 10 to 15 minutes.
