  • 1 yellow onion, finely diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 can (6 ounces) tomato paste
  • 1 can (28 ounces) diced fire-roasted tomatoes, undrained
  • 2 cups low sodium beef broth (or 1 cup beer + 1 cup beef broth)
  • 1 bay leaf

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. Add ground beef; season with salt and pepper. Cook until browned.
  3. Stir in onions, bell pepper, and garlic; cook until softened.
  4. Mix in chili powder, cumin, oregano, and smoked paprika; combine well.
  5. Add tomato paste and cook for 3 minutes.
  6. Stir in fire-roasted tomatoes and beef broth; scrape bottom for flavor.
  7. Add bay leaf and bring to a simmer; reduce heat and let it simmer for about 25-30 minutes.
