  • ¼ cup Tamari or soy sauce
  • 2 tablespoons Thai sweet red chili sauce
  • Juice of 1 lime
  • ⅓ cup cashews (chopped)
  • ¼ cup scallions (chopped)
  • ¼ cup cilantro (chopped)
  • Butter lettuce leaves

Instructions

  1. Heat sesame oil in a skillet over medium-high heat. Add diced onion and sauté until translucent.
  2. Stir in garlic and ginger; cook for an additional two minutes.
  3. Add ground chicken, breaking it apart with a spoon. Cook until golden brown and no longer pink.
  4. Combine Tamari, Thai chili sauce, lime juice, and maple syrup in a bowl; mix well.
  5. Pour sauce over cooked chicken along with chopped cashews. Toss to combine and let simmer for two minutes.
  6. Fold in scallions, cilantro, and shredded carrots before assembling in lettuce leaves.
