Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan.
  2. In a mixing bowl, whisk together soy milk and apple cider vinegar; let it sit for about 5 minutes.
  3. Add canola oil, applesauce, and vanilla extract to the mixture and blend well.
  4. In another bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually mix dry ingredients into the wet ingredients until smooth.
  6. Stir in boiling water until well combined; the batter will be thin.
