Ingredients

  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • A pinch of salt
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream
  • Cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8 or 9-inch square baking tin with parchment paper.
  2. In a microwave-safe bowl, melt the dark chocolate and unsalted butter together in intervals until smooth.
  3. Mix in brown sugar and granulated sugar until combined, then add eggs one at a time, whisking after each addition.
  4. Gently fold in sifted flour and salt until just combined. Pour into the prepared tin and bake for 25-30 minutes.
  5. Once baked, poke holes on the surface and pour espresso over the brownies while warm. Let cool before applying the mascarpone topping.
  6. Whip heavy cream with sugar and vanilla to soft peaks, then fold in room temperature mascarpone. Spread over cooled brownies and dust with cocoa powder.
