  • 20 oz cheese tortellini (uncooked)
  • 10 oz cherry tomatoes (halved)
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • 1/4 cup chopped basil
  • 1/2 cup olive oil
  • 2 tbsp balsamic vinegar
  • 34 garlic cloves (minced)
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions until al dente. Drain using a colander and rinse with cool water.
  2. While the tortellini cooks, chop the spinach, tomatoes, basil, and mince garlic.
  3. In a large mixing bowl, combine cooked tortellini, spinach, tomatoes, mozzarella pearls, basil, and garlic.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Pour over the salad mixture and toss well.
  5. Chill in the refrigerator for at least 30 minutes before serving. Drizzle with balsamic glaze just before serving.
