Ingredients
- 20 oz cheese tortellini (uncooked)
- 10 oz cherry tomatoes (halved)
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- 1/4 cup chopped basil
- 1/2 cup olive oil
- 2 tbsp balsamic vinegar
- 3–4 garlic cloves (minced)
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions until al dente. Drain using a colander and rinse with cool water.
- While the tortellini cooks, chop the spinach, tomatoes, basil, and mince garlic.
- In a large mixing bowl, combine cooked tortellini, spinach, tomatoes, mozzarella pearls, basil, and garlic.
- In a small bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Pour over the salad mixture and toss well.
- Chill in the refrigerator for at least 30 minutes before serving. Drizzle with balsamic glaze just before serving.
