  • 1 small yellow onion, diced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 (14.5 oz) cans low-sodium chicken broth
  • 1 (7 oz) can diced green chilies
  • 1 (8 oz) package Neufchatel cheese, cubed
  • 2 ½ cups shredded cooked chicken
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 1 ¼ cups corn

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté onion for about 4 minutes until softened; add garlic and sauté for an additional 30 seconds.
  2. Stir in chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne pepper, salt, and pepper. Bring to a boil, then reduce heat to medium-low and simmer for about 15 minutes.
  3. While simmering, puree one cup of cannellini beans with a quarter cup of broth until smooth (optional).
  4. Add Neufchatel cheese cubes, corn, pureed beans, and remaining whole beans to the pot; mix until cheese is melted.
  5. Incorporate shredded chicken along with lime juice and chopped cilantro. Adjust seasoning as needed.
  6. Serve hot with toppings like Monterey Jack cheese, sliced avocado, cilantro, or tortilla chips.
